It's important to remember that while the Enhanced version of GTA 5 is a free upgrade, it's a self-contained game in its own right and separate from the original, which is now called the "Legacy" version.
This being the case, crossplay with players on the latter versions isn't possible. So, once you upgrade, you will still have the legacy version in your Steam or Epic Games library alongside the Enhanced version, but the progression of both games will be separate.

Migrating GTA Online Profile to Enhanced Version
Here's how you can migrate your GTA Online Profile to Grand Theft Auto 5 Enhanced Edition:
Launch Grand Theft Auto 5 Enhanced Edition from your Steam or Epic Games library.
Navigate to the "Online" tab located in the top-left corner of the game's landing page.
Click the large " Grand Theft Auto Online " graphic displayed beneath the "Online" option. This will initiate the profile migration process. You may also get GTA Online's classic intro cutscene before that.

The "Migrate Profile" screen will appear, displaying your GTA 5 Legacy profiles.

Select the profile you wish to migrate to the Enhanced Edition and click the "Migrate" button.
A confirmation prompt will appear. This warns you that the migration will overwrite any existing GTA Online data on the Enhanced Edition. Since this is your first time, you'll be overwriting a new, level 1 account. Confirm the migration.

Wait for the migration process to complete. A "Success" screen will confirm the successful transfer of your Online profile.

You'll be redirected to the "Choose a Character" screen.
Select the character you want to use in the Enhanced Edition. In this case, your migrated character.

Unfortunately, as of now, there is no way to transfer your save files without logging into the Legacy version of GTA 5.

Ensure you are logged into the same Rockstar Social Club account that was used for your previous PC profile (regardless of whether you played on Steam or Epic Games).

If you don't see the Enhanced Edition, it's possible your PC's specifications are below the minimum requirements.

Even after starting a new game or loading an existing one in the Enhanced Edition's Story Mode, you can still download your uploaded save files. Simply pause the game and go to Game -> Download Save Game.

If the migration prompt didn't appear following the cutscene, don't worry. You can access it later by creating a new character and then navigating to Online -> Migrate Profile in the GTA Online pause menu.

Can I delete GTA 5 Legacy once I've migrated and installed the Enhanced version?
Legacy edition is primarily required for transferring save files of Story Mode. GTA Online characters are associated with your Rockstar Social Club account and do not require the Legacy edition.
As already stated, the Legacy and Enhanced editions are two distinct entities with their own respective progression. Once you have completed migrating your save files, Legacy edition can be safely uninstalled.
